PASSATELLI IN BRODO

Ingredients

Grated Grana Padano
breadcrumbs
2 fresh eggs
nutmeg, pepper
beef or chicken stock.

Beat the eggs in a bowl, flavour with pepper and nutmeg, and stir in the cheese and breadcrumbs until the mixture is firm but not crumbly. Leave it to absorb the flavours for about 30 minutes, then pass through the special tool (or a potato masher) and make the passatelli (a sort of macaroni, about 4-5 cm. in length).
Carefully put them in the simmering stock, and serve as soon as they re-emerge.
